Groundbreaking ceremonies are planned for the Bean Counter Café, the first of several construction phases for Colonial Gardens that will culminate in an innovative nursery and agri-tourism destination in Blue Springs.
The announcement was made by DCA Outdoor and Colonial Gardens, which is a subsidiary of DCA. The area covers about 40 acres in Blue Springs.
“The groundbreaking of Colonial Gardens moves us one step closer to transforming this historic nursery into a modern agri-tourism destination and innovative garden center,” said Tory Schwope, CEO and founder of DCA Outdoor. “We’re excited to offer a unique atmosphere and experience to the Blue Springs community through the revitalization of Colonial Gardens.”
DCA said the first construction phase focuses on building a location for Bean Counter Café, which will relocate from its current location in Blue Springs. The new Bean Counter Café will cover approximately 1,700 square feet of space. The farm-to-table café will serve breakfast and lunch seven days a week, as well as provide catering and carry-out services.
Many of the menu items will incorporate herbs and produce grown on-site. Bean Counter Café will house interactive events in the future, including cooking demonstrations and wine pairing dinners.

Colonial Gardens COO Todd McGuire said the Bean Counter Café is a natural fit for the group because of its emphasis on serving high-quality and sustainable foods.
